Ingredients
- 2 Pizza Dough Balls2
- ¼ Cup Extra Virgin Olive Oil¼ Cup
- ½ Cup Parmesan Cheese, Grated½ Cup
- 3 cloves Fresh garlic, roughly chopped3 cloves
- 2 cups Mozzarella cheese, shredded2 cups
- 3 Tbsps. Fresh Rosemary, Minced3 Tbsps.
Instructions
Preheat the oven to 450ºF
Stretch each dough ball into a 14-inch pizza pan greased with some of the remaining extra virgin olive oil
Spread enough mascarpone over the crusts to just cover
Sprinkle half of the garlic and drizzle extra virgin olive oil over each pizza
Top each with half of the parmesan and mozzarella, then half of the potatoes, pancetta, red onion, and rosemary
Bake until golden brown and bubbly, about 10 minutes, turning the pizzas once during cooking
When the pizzas are done, remove from the oven, and allow to rest for 3-4 minutes
Slice and serve
