Ingredients

Carando Prosciutto, rendered crispy and chopped
6 ounces

Pizza Dough Balls

¼ Cup
Extra Virgin Olive Oil
¼ Cup
½ Cup
Parmesan Cheese, Grated
½ Cup
3 cloves
Fresh garlic, roughly chopped
3 cloves
2 cups
Mozzarella cheese, shredded
2 cups
3/4 cup
Small red potatoes, sliced & roasted
3/4 cup
1/3 cup
Red onion, diced
1/3 cup
3 Tbsps.
Fresh Rosemary, Minced
3 Tbsps.

Directions


  1. Preheat the oven to 450ºF

  2. Stretch each dough ball into a 14-inch pizza pan greased with some of the remaining extra virgin olive oil

  3. Spread enough mascarpone over the crusts to just cover

  4. Sprinkle half of the garlic and drizzle extra virgin olive oil over each pizza

  5. Top each with half of the parmesan and mozzarella, then half of the potatoes, prosciutto, red onion, and rosemary

  6. Bake until golden brown and bubbly, about 10 minutes, turning the pizzas once during cooking

  7. When the pizzas are done, remove from the oven, and allow to rest for 3-4 minutes

  8. Slice and serve
