Ingredients
- 1/4 pound Carando Cooked Hot Capicola, diced1/4 pound
- 1/4 pound Carando Genoa Salami, diced1/4 pound
- 1/4 pound Gorgonzola cheese, crumbled1/4 pound
- 3 cups Arugula3 cups
- 3 Romaine hearts, chopped3
- 1 Persian cucumber, diced1
- 2 cups Small salad tomatoes2 cups
- 1/2 cup Red onion, diced1/2 cup
- 6 Pepperoncini, sliced6
- 1/2 cup White wine vinegar1/2 cup
- 1 cup Extra virgin olive oil1 cup
- 2 tablespoons Fresh basil, minced2 tablespoons
- 2 tablespoons Parmesan cheese, grated2 tablespoons
- 1 teaspoon Garlic paste1 teaspoon
- 1 tablespoon Honey1 tablespoon
- 1 teaspoon Dried oregano1 teaspoon
Instructions
In a large bowl, mix the capicola, salami, gorgonzola, arugula, romaine, cucumbers, tomatoes, onion, and pepperoncini, and gently toss to combine
Place the vinegar, extra virgin olive oil, basil, parmesan, garlic, honey, and oregano in a jar with a tight-fitting lid and shake vigorously to combine
Dress the salad with the desired amount of dressing and toss to mix
Serve immediately
