Preheat the oven to 400ºF.
Spread half of the fig jam on each flatbread.
Sprinkle half of the gorgonzola cheese evenly over each flatbread.
Loosely roll slices of the prosciutto and place evenly over each of the flatbreads.
Bake the flatbreads for 12-15 minutes or until the cheese and prosciutto are golden brown.
Remove from the oven and evenly sprinkle the mint over each flatbread. Serve immediately.
