Ingredients
- 1 pack Carando Abruzzese meatballs1 pack
- 6 slices Center Cut Bacon6 slices
- 1 cup Golden Raisins1 cup
- 1 tablespoon Fresh garlic, minced1 tablespoon
- 2 tablespoons Shallot, minced2 tablespoons
- 3.5 ounces Capers, drained3.5 ounces
- 1/2 cup White wine1/2 cup
- 3 tablespoons Fresh dill, chopped3 tablespoons
Instructions
Preheat the oven to 375ºF
Cut the slices of bacon in half, then wrap one piece of bacon around each meatball and secure the bacon with a toothpick
Place the meatballs on a lined baking sheet and bake for about 25 minutes, turning once halfway through the cook time, or until the meatballs reach an internal temperature of 160ºF and the bacon is cooked
While the meatballs are cooking, combine the raisins, garlic, shallot, capers, and wine in a small saucepan and bring to a boil, reduce to a simmer, and cook for about 5 minutes. Allow to cool slightly
When the mixture has cooled, puree the mixture in the beaker of a blender and transfer to a bowl
When the meatballs are done, brush each with the glaze and transfer to a platter, leaving the toothpicks in place for easy pick up
Sprinkle the dill over the meatballs and serve immediately
