Red wine vinegar

Kosher salt
3 tablespoons

1/2 cup
Fig preserves
1/2 cup
1/2 cup
Whole grain mustard

Directions


  1. Bring the red wine vinegar, sugar, water, salt, star anise, cinnamon, and mustard seeds to a boil in a large pot

  2. Add the red cabbage and bring back to a boil

  3. Remove from the heat and allow to cool completely. Reserve

  4. Heat a heavy skillet over medium-high heat

  5. Cook the brats until golden brown, turning often

  6. Deglaze the pan with the beer, cover, and simmer for 5 minutes

  7. While the brats are cooking, stir together the preserves and mustard. Reserve

  8. Toast or steam the rolls, if desired

  9. To assemble: place one brat in each roll, top with desired amount of fig mustard, then the desired amount of red cabbage. Serve immediately
