Preheat the oven to 425ºF.
In a large mixing bowl, combine the ricotta, egg, parmesan, and parsley.
Stretch the dough balls into large circles and top each with half of the ricotta mixture, then half of the ham, then half of the brie cheese.
Fold the dough over each to form a half circle. Crimp the edges to seal.
Make a slice in the dough for a vent. Bake for 20 minutes or until golden brown.
While the calzones are cooking, combine the cranberry sauce, mustard, honey, allspice, nutmeg, and cayenne. Reserve.
Serve hot with the cranberry-mustard sauce on the side.
