Grape Tomatoes, cut in half

Sweet Onion, cut into 1-inch pieces

3 Tablespoons
Extra Virgin Olive Oil
3 Tablespoons
2 Tablespoons
Red Wine Vinegar
2 Tablespoons
1 Tablespoon
Honey
1 Tablespoon
1 Tablespoon
Fresh Oregano, chopped
1 Tablespoon

Directions


  1. Preheat the oven to 425ºF

  2. Line a baking sheet with foil

  3. Toss the grapes, tomatoes, onions, and oregano together in a bowl with the extra virgin olive oil, red wine vinegar, and honey

  4. Remove the fruit and vegetables from the marinade, reserving the liquid

  5. Spread the mixture as well as the sausages evenly over the baking sheet

  6. Roast in the oven for 15 minutes, or until the vegetables have caramelized and the sausage is cooked through

  7. Place the sausage and vegetable mix in a large bowl, cover with the reserved marinade and toss to thoroughly coat

  8. Transfer to a large platter or serving bowl and serve immediately
