Preheat the oven to 350ºF.
Heat a saucepan over medium-high heat. Add the extra virgin olive oil, onions, and garlic, stirring constantly until the vegetables have softened.
Add the oregano, then deglaze the pan with the white wine.
Add the tomato paste and crushed tomatoes and simmer for about 10 minutes.
Split the sausages lengthwise halfway through, making sure to keep the links intact.
Stuff some of the diced mozzarella into the seam of each sausage, then top with the cherry peppers.
Pour the tomato sauce into an oven safe baking dish, then gently place the sausages on top of the sauce.
Bake for about 25 minutes or until the sausages are cooked through and the cheese is melty and beginning to brown.
Remove from the oven and serve hot.
