Carando Mild Toscano Ground Sausage
1 package
1 pound
Elbow Macaroni
1 pound
1/2 cup
Yellow Onion, Diced
1/2 cup
1/2 cup
Red Bell Pepper, Diced
1/2 cup
2 tablespoons
Fresh Garlic, Minced
2 tablespoons
28 ounces
San Marzano Crushed Tomatoes
28 ounces
2 tablespoons
Calabrian Chiles, Chopped
2 tablespoons
2 tablespoons
Chili Powder
2 tablespoons
1 teaspoon
Ground Allspice
1 teaspoon
1 tablespoon
Rubbed Sage
1 tablespoon
1/2 pound
Provolone Cheese, Sliced
1/2 pound
2 tablespoons
Flat Leaf Parsley, Chopped
2 tablespoons

Directions

  1. Preheat the oven to 350°F.

  2. Cook the macaroni according to package instructions. Drain and rinse with cold water to stop the cooking. Reserve.

  3. While the macaroni is cooking, heat a large, heavy-bottomed pot over medium-high. Brown the sausage, breaking up any large clumps that form, and drain on paper towels. Reserve.

  4. In the same pan, sauté the onion, peppers, and garlic until beginning to soften, and return the sausage to the pan.

  5. Add the tomatoes, chiles, chili powder, allspice, and sage. Stir to combine.

  6. Allow to simmer for about 10 minutes, then add the macaroni, folding to combine.

  7. Transfer the macaroni mixture to a large baking dish and top with provolone cheese. Bake for about 20 minutes or until the cheese is melted and just beginning to brown.

Life is Delicious. Savor It.
