Balsamic Vinegar

Honey

Fire Roasted Diced Tomatoes, drained

Directions


  1. Preheat the oven to 325ºF

  2. While the oven is preheating, combine all ingredients except the balsamic, honey, and tomatoes in a large mixing bowl

  3. Work the meatloaf ingredients with clean hands until all ingredients are incorporated, and the mixture is smooth

  4. On a baking sheet lined with foil, divide the mixture into two even amounts and form into loaves, ensuring there are no cracks

  5. Bake in the oven for 30 minutes

  6. While the meatloaves are cooking, place the balsamic and tomatoes in a small saucepan, bring to a boil, reduce heat, and reduce by 1/3

  7. Remove the tomato mixture from the heat. Add the honey and allow to cool slightly

  8. Puree the glaze in a blender until smooth and reserve

  9. After 30 minutes of baking, increase the temperature to 375ºF. Glaze the loaves with the balsamic/tomato glaze and bake for another 10 minutes, or until the glaze is slightly browned and the loaves have reached an internal temperature of 165ºF

  10. Remove the meatloaf from the oven and allow it to rest for 5-10 minutes, transfer to a cutting board and slice and serve hot
