Ingredients
- 1 Package Carando Ground Toscano Italian Sausage1 Package
- 1 Pound Lean Ground Beef1 Pound
- 1 Cup White Onion, minced1 Cup
- 1 Cup Red Bell Pepper, minced1 Cup
- 2 Cloves Fresh Garlic, minced2 Cloves
- 1/4 Cup Fresh Basil1/4 Cup
- 1 Tablespoon Dry Oregano Leaves1 Tablespoon
- 1 Cup Rolled Oats1 Cup
- 2 Large Eggs2
- 1/4 Cup Balsamic Vinegar1/4 Cup
- 1 Cup Honey1 Cup
- 3 Tablespoons Fire Roasted Diced Tomatoes, drained3 Tablespoons
Instructions
Preheat the oven to 325ºF
While the oven is preheating, combine all ingredients except the balsamic, honey, and tomatoes in a large mixing bowl
Work the meatloaf ingredients with clean hands until all ingredients are incorporated, and the mixture is smooth
On a baking sheet lined with foil, divide the mixture into two even amounts and form into loaves, ensuring there are no cracks
Bake in the oven for 30 minutes
While the meatloaves are cooking, place the balsamic and tomatoes in a small saucepan, bring to a boil, reduce heat, and reduce by 1/3
Remove the tomato mixture from the heat. Add the honey and allow to cool slightly
Puree the glaze in a blender until smooth and reserve
After 30 minutes of baking, increase the temperature to 375ºF. Glaze the loaves with the balsamic/tomato glaze and bake for another 10 minutes, or until the glaze is slightly browned and the loaves have reached an internal temperature of 165ºF
Remove the meatloaf from the oven and allow it to rest for 5-10 minutes, transfer to a cutting board and slice and serve hot
