2 cups
Frozen Spinach, Chopped

1/2 cup

1 pound
Fresh Pasta Sheets
1 pound
2 tablespoons
Marinara Sauce
2 tablespoons

Directions

  1. Preheat the oven to 375ºF.

  2. Heat a skillet over medium-high heat and brown the sausage, breaking up any large clumps that form.

  3. While the sausage is browning, combine the ricotta, parmesan, mozzarella, spinach, and eggs in a large mixing bowl.

  4. Drain the sausage and paper towels, and allow to cool.

  5. Add the sausage to the spinach mixture.

  6. Lay the pasta sheets out on a clean, dry work surface, one at a time.

  7. Spread a thin layer of the sausage mixture over the pasta sheet. Gently roll the sheets up, starting with the long edge toward you, and rolling away to create a long tube shape.

  8. Repeat with the remaining pasta sheets.

  9. Cover the bottom of a large baking dish with the marinara sauce.

  10. Slice the rolls into 2-inch long sections and place cut side down on the marinara sauce.

  11. Pour 1/2 cup of water over the dish, cover, and bake for about 30 minutes.

  12. Remove from the oven and serve hot.

Life is Delicious. Savor It.
