Ingredients
Directions
Preheat the oven to 375ºF.
Heat a skillet over medium-high heat and brown the sausage, breaking up any large clumps that form.
While the sausage is browning, combine the ricotta, parmesan, mozzarella, spinach, and eggs in a large mixing bowl.
Drain the sausage and paper towels, and allow to cool.
Add the sausage to the spinach mixture.
Lay the pasta sheets out on a clean, dry work surface, one at a time.
Spread a thin layer of the sausage mixture over the pasta sheet. Gently roll the sheets up, starting with the long edge toward you, and rolling away to create a long tube shape.
Repeat with the remaining pasta sheets.
Cover the bottom of a large baking dish with the marinara sauce.
Slice the rolls into 2-inch long sections and place cut side down on the marinara sauce.
Pour 1/2 cup of water over the dish, cover, and bake for about 30 minutes.
Remove from the oven and serve hot.
