Preheat the oven to 425ºF.
Heat a large sauté pan over medium-high heat and brown the sausage, breaking up any large clumps.
Add the onion and mushrooms and sauté until tender.
Add the roasted peppers and cook until all liquid has evaporated.
Stir in the eggs and cook until just set. Fold in the mozzarella and parmesan and transfer to a platter. Reserve.
Stretch the dough balls into large circles and top each with half of the egg mixture. Fold over the two sides to make a long cylinder, then fold the short edges over to seal.
On a sheet tray lined with parchment paper, transfer the stromboli with the folded edges on the bottom. Slice 3-4 slits on the top of each and bake for 15-20 minutes or until golden brown and the cheese is melted.
Allow to rest for 3-4 minutes. Slice into portions and serve with pizza sauce on the side for dipping.
